Next Level Nectarine Crumble

Ingredients

  • 1/4 cup melted butter
  • 1/4 cup brown sugar
  • 3/4 cup flour
  • 2 tablespoons oatmeal
  • 3 ripe nectarines, sliced into bite sized pieces
  • 1/4 cup butter, cubed
  • 1 tablespoon freshly squeezed lemon juice
  • dash of ground nutmeg
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat oven to 350 degrees.
  2. Butter the insides of 4 mini round cocottes.
  3. Combine melted butter, brown sugar and oatmeal in a small mixing bowl.
  4. Work in flour a little bit at a time until crumbly.
  5. Toss nectarines, lemon juice, nutmeg and almond extract together in small bowl.
  6. Divide nectarine mixture among the four cocottes.
  7. Dot each with butter cubes.
  8. Sprinkle crumble topping over.
  9. Bake in preheated oven for 20-25 minutes, until light golden brown and bubbly.
  10. Top with a scoop of vanilla ice cream and a mint sprig.
