Roasted Caprese Pappardelle Pasta

POV~ You love Caprese but you're craving a sheet pan supper, and you find this Roasted Caprese Pappardelle entree. Savor the simplicity of oven roasted garlic and wild wonders tomatoes with melted burrata and toasted pine nuts over ribbons of buttered pappardelle with freshly minced basil.

Ingredients

  • 1 pint Wild Wonders Medley snacking tomatoes, cut in half
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teapoon kosher salt
  • 8 ounce Burrata ball
  • 4 ounces pappardelle pasta
  • 1/4 cup butter
  • 1/4 cup pine nuts
  • 1/4 cup fresh basil, thinly sliced

Instructions

  1. Preheat oven to 375 degrees.
  2. Arrange cut tomatoes and minced garlic on sheet pan and drizzle with olive oil.
  3. Roast in preheated oven for 6 minutes,  flip tomatoes,  add garlic and burrata and continue roasting for an additional 8 minutes.
  4. Meanwhile, cook pappardelle pasta according to package instructions, drain and toss with butter and salt.

Arrange hot buttered pappardelle on center of each plate, then top with roasted garlic tomatoes, burrata and sliced basil. Sprinkle with toasted pine nuts.
