Summer Berry Bliss Salad with Grilled Chicken

If you're craving a refreshing reset after overindulging, we've got you covered with this Summer Berry Bliss Salad with Grilled Chicken featuring butter lettuce leaves lightly dressed with my very favorite Creamy Honey White Balsamic Vinaigrette (shake some up and drizzle it over every summer salad you're tossing together these days) adorned with fresh cherries, blueberries, blue cheese crumbles, grilled chicken and Marcona almonds. Extra dressing on the side for drizzling. :)

Ingredients

  • 2 thin cut chicken breasts
  • 3 tablespoons honey white balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons heavy whipping cream
  • Kosher salt
  • freshly ground pepper
  • 4 ounce container butter lettuce
  • 1 cup fresh cherries, pitted
  • 1 cup fresh blueberries
  • 1/2 cup blue cheese crumbles
  • 1/2 cup Marcona almonds

Instructions

  1. Preheat BBQ grill to 350 degrees.
  2. Season both sides of chicken breasts with salt and freshly ground pepper.
  3. Place seasoned chicken breasts on preheated grill and grill for five minutes, or just until they release from the grill. Flip and grill other sides for an additional five minutes, or until chicken is cooked through. Remove and let rest briefly, then slice thinly with a sharp knife.
  4. In a jar with a lid, combine vinegar, olive oil, honey, cream and salt and pepper to taste.
  5. Cover jar and shake until well mixed.
  6. Toss butter lettuce with enough dressing to coat. Reserve remaining dressing for drizzling.
  7. Divide lightly dressed greens among two salad plates.
  8. Arrange cherries, blueberries, blue cheese, grilled chicken and Marcona almonds on top of dressed greens.
  9. Serve with additional Creamy Honey White Balsamic Vinaigrette for drizzling.
