Pistachio Pudding Pot of Gold Parfaits

If you grew up loving pistachio pudding like I did, THIS one's for you! (I may be dating myself there, but that's okay.) If you've never tried pistachio pudding, give it a whirl. These Pistachio Pudding Pot of Gold Parfaits are the easiest St. Patrick's Day treat ever and would be so fun to whip up with the littles in your life, whether that's kids or grandkids. Have someone stir together the Pistachio pudding while someone else whips up the almond whipped cream, then everyone can layer up the parfaits and decorate with almond whipped cream clouds, fantasy sour belt rainbows and a dusting of gold at the end of the rainbow. Enjoy!

Ingredients

  • 1 package instant pistachio pudding mix
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon almond extract
  • fantasy sour belts, cut into short strips
  • gold sprinkles

Instructions

1. Combine pudding mix and milk in a mixing bowl and stir until well mixed. Cover and refrigerate briefly.

2. Whip cream with electric mixer until peaks form. Beat in powdered sugar and almond extract.

3. Layer pudding and almond whipped cream in serving dishes.

4. Decorate each parfait with piped whipped cream for clouds and sour belt strips bent into rainbows.
