Brioche Baguette Benny Boats

Level up your brunch game with this Eggs Benedict tucked into a toasty brioche baguette drizzled with Hollandaise and garnished with lemon zest and parsley. Ingredients

  • 2 St. Pierre Brioche Sub Rolls
  • 1/2 pound honey ham, thinly sliced
  • 6 eggs
  • 2 egg yolks
  • 1 tablespoon fresh lemon juice
  • 1/2 cup melted butter
  • dash kosher salt
  • lemon peel, for garnish
  • fresh parsley, for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Use a melon baller to hollow out three three-inch holes in each roll.
  3. Tuck a small piece of ham in each hole.
  4. Top with an egg.
  5. Season with salt.
  6. Cover baking sheet with parchment paper, and bake assembled Benny Boats for about 15 minutes, or until eggs are set.
  7. Blend two egg yolks in blender until thickened.
  8. Add lemon juice and blend.
  9. Stream warm melted butter into blender, a small amount at a time and blend.
  10. Season with a dash of kosher salt.

To serve:

Drizzle warm Hollandaise over Benny Boats and cut into slices. Garnish with lemon peel and fresh parsley.
