Coconut Sunshine Bowls

When it's too hot to cook, whip up these Coconut Sunshine Bowls, and cool right off. These coconut-infused vanilla frozen yogurt based bowls topped with fresh strawberries, bananas, toasted coconut and honey are the super satisfying cool-you-off-in-a-hurry treat you didn't know you needed until now. Enjoy!

Ingredients

  • 1 quart vanilla frozen yogurt
  • 1/4 cup cream of coconut (or more to taste)
  • sliced strawberries
  • sliced bananas
  • 1/2 cup coconut flakes
  • 2 tablespoons honey

Instructions

  1. Preheat oven to 300 degrees.
  2. Spread coconut flakes out on rimmed baking sheet.
  3. Toast coconut in preheated oven for 5 minutes, just until lightly toasted.
  4. Let frozen yogurt soften while you're toasting the coconut.
  5. Use an electric beater to beat together frozen yogurt and cream of coconut.
  6. Transfer to six serving bowls and freeze until firm

When ready to serve~ Top frozen yogurt with sliced strawberries, sliced bananas, toasted coconut and a drizzle of honey.
