Wedge Salad Skewers
Wedge Salad, but put it on a skewer, I say! Thread cherry tomato first, then blue cheese wedge, then Brioche crouton and end with romaine cube.
Drizzle with Buttermilk Blue Cheese Dressing and balsamic drizzle and enjoy, my friends!
Ingredients
- 1/4 cup sour cream
- 1/3 cup buttermilk
- 1/4 cup real mayo
- 12 ounces blue cheese crumbles
- 1/4 cup red wine vinegar
- 1 tablespoon olive oil
- 1 tablespoon sugar
- 1/4 teaspoon garlic powder
- 4 slices brioche bread
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon Herbes de Provence
- 1 pint cherry tomatoes
- 8 ounces blue cheese, cut into bite-sized wedges
- 2 romaine hearts, cut into bite-sized cubes
- Balsamic Drizzle, for garnish
Instructions
- Whisk together~ sour cream, buttermilk, real mayo, 2 ounces blue cheese crumbles, red wine vinegar, 1 tablespoon olive oil, sugar and garlic powder to make Buttermilk Blue Cheese Dressing.
- Cut 4 slices brioche bread into 1-inch squares. Place in medium mixing bowl and toss with 3 tablespoons olive oil, 1 teaspoon kosher salt and Herbes de Provence.
- Heat medium sauté pan over medium low heat and sauté seasoned Brioche squares just until light golden brown, turning to toast both sides.
- Skewer cherry tomato, Brioche crouton, blue cheese wedge and lastly romaine cube on wooden skewer.
- Drizzle with Buttermilk Blue Cheese Dressing and Balsamic Drizzle.
