Toasted Coconut-Almond Granola Bars

These chewy Toasted Coconut-Almond Granola Bars are so easy to stir together and bake up, you may never buy granola bars at the store again!

Ingredients

  • 2 cups granola crumbs
  • 1/2 cup toasted slivered almonds
  • 1/2 cup toasted coconut flakes
  • 1 teaspoon kosher salt
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 2/3 cup honey
  • 1 teaspoon coconut extract

Instructions

  1. Preheat oven to 300 degrees and set granola bar mold on baking sheet.
  2. Combine butter, brown sugar and honey in a heavy medium saucepan over medium heat, stirring to combine.
  3. Bring to a boil and simmer briefly, then remove from heat and add coconut extract, stirring to combine.
  4. Combine granola crumbs, toasted almonds, toasted coconut and salt in a large mixing bowl. Pour syrup over and stir to combine.
  5. Spoon granola bar mixture into granola bar mold to fill. Then press down with parchment.
  6. Bake in preheated oven for 20 minutes. Then remove from oven and let cool completely befroe unmolding.
