Sweet Italian Sausage Lasagna Soup
Warming you up from the inside out with this super satisfying Sweet Italian Sausage Lasagna Soup recipe. Requiring a short list of ingredients and minimal cook time, it's the one-pot dinner winner you'll be making on repeat for the foreseeable future.
Ingredients
- 2 tablespoons olive oil
- 1 cup sweet onion, diced
- 1/4 cup red wine vinegar
- 1/4 cup sugar
- 4-14.5 ounce cans Diced Fire Roasted Tomatoes with Garlic
- 6 ounces oven-ready lasagna sheets
- 19 ounces Sweet Italian Sausages
- fresh basil leaves, for garnish
- grated mozzarella, for serving
Instructions
- Heat oil in a medium Dutch oven over medium heat and sauté onion until softened.
- Use kitchen shears to slice sausage casings and peel casings off. Add sausage to Dutch oven and cook, stirring occasionally until browned.
- Add red wine vinegar, sugar, tomatoes and lasagna sheets and simmer gently for 20 minutes, or until lasagna noodles are al dente.
- Ladle hot Sweet Italian Sausage Lasagna Soup into serving bowls, sprinkle with grated mozzarella and garnish with fresh basil leaves.
