Strawberry Arugula Salad with Quick-Pickled Red Onion Rings, Goat Cheese and Toasted Almonds

Ingredients
- 1/2 cup thinly sliced red onion rings
- 1/4 cup water
- 2 tablespoons red wine vinegar
- 2 tablespoons honey white balsamic vinegar
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons balsamic glaze
- 1 teaspoon rice wine vinegar
- 2 teaspoons olive oil
- 2 teaspoons heavy cream
- 1 tablespoon water
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 2 cups baby arugula
- 2 cups sliced strawberries
- 1 cup diced cucumbers
- 1/2 cup crumbled goat cheese
- 1/2 cup toasted almonds
Instructions
- Put sliced red onion rings in a covered jar.
- Add water, red wine vinegar, honey white balsamic vinegar, 1/4 teaspoon salt and sugar. Cover, shake and refrigerate until ready to use.
- in a second jar, shake together balsamic glaze, rice wine vinegar, olive oil, heavy cream, 1 tablespoon water, 1/4 teaspoon salt and 1/8 teaspoon freshly ground pepper.
- Toss dressing with arugula, sliced strawberries, diced cucumbers, goat cheese, quick-pickled red onion rings and toasted almonds.
