Prosciutto, Fig and Caramelized Onion Flatbread

Layers of deliciousness with lightly dressed greens on top, this Prosciutto, Fig and Caramelized Onion Flatbread warm from the oven with a glass of wine is all you need for supper or a hearty appetizer to kick off a dinner on the deck party.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium sized sweet onion, sliced into thin rings
  • 1 Italian Artisan pizza crust flatbread
  • 1/4 cup orange fig spread
  • 1/4 pound prosciutto, sliced into ribbons
  • 4 ounces fresh mozzarella, sliced thinly
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground pepper
  • 2 cups arugula

Instructions

1. Preheat oven to 400 degrees.

2. Heat 2 tablespoons olive oil in heavy pan over medium heat.

3. Add onions and cook, stirring occasionally until softened.

4. When onions are softened, increase heat to medium high,and cook, stirring frequently to prevent overbrowning, until carmelized.

5. Remove from heat and let rest.

6. Spread fig spread over flatbread crust to cover.

7. Top with prosciutto, caramelized onions and mozzarella slices, distributing evenly.

8. Bake in preheated oven for 12-14 minutes, until cheese is melted and bubbly.

9. While flatbread is cooking, dress the greens.

Whisk together 2 tablespoons olive oil and 1 tablespoon balsamic vinegar.

Add salt and pepper and whisk to combine.

Toss arugula with dressing and set aside.

10. Top baked flatbread with lightly dressed arugula.

Slice, serve and enjoy!
