Oatmeal Raisin Cookie Granola Bars

These chewy Oatmeal Raisin Cookie Granola Bars are so simple to make and such a delight to devour. Make them once, and you may never buy granola bars at the store again! Let me know if you make them. Can't wait to bake up my next batch soon...

Ingredients

  • 2 cups Purely Elizabeth Oatmeal Cookie Granola crumbs
  • 1/2 teaspoon kosher salt
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 1/3 cup honey
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 300 degrees.
  2. Combine butter, brown sugar and honey in a heavy medium saucepan over medium heat, stirring to combine.
  3. Bring mixture to a boil and simmer briefly, then remove from heat and add vanilla, stirring to combine.
  4. Combine granola crumbs and salt in a large mixing bowl. Pour syrup over and stir to combine.
  5. Spoon granola bar mixture into granola bar mold to fill. Then press down with a sheet of parchment paper.
  6. Bake in preheated oven for 20 minutes. Then remove from oven and let cool completely before unmolding.

These Oatmeal Raisin Cookie Granola Bars are delightfully chewy, and a little sticky, so separate with parchment so they don’t stick to the plate you’re serving them on.
