Mixed Berry and Blue Cheese Salad with Poppyseed Dressing and Candied Cashews
This Mixed Berry and Blue Cheese Salad with Poppyseed Dressing and Candied Cashews was actually the very first post on my fast.fresh.fabulous instagram account when I started it three years ago on May 2, 2021. I thought it would be fun and fitting to make again and capture an updated light and bright photo to celebrate the occasion. This fresh from the archives favorite features Litehouse Poppyseed Dressing and candied cashews that come together in a snap. Enjoy!
Ingredients
- mixed greens
- 1 pint raspberries
- 1 pint blueberries
- 4 ounces blue cheese, sliced
- 1/4 cup sugar
- 1/2 cup cashews
- 1/4 teaspoon kosher salt
- 12 ounce bottle Litehouse Poppyseed Dressing
Instructions
- Sprinkle sugar into a small sauté pan over medium heat and allow to melt, watching carefully and adjusting heat if necessary.
- Toss in cashews and stir to coat. Transfer candied cashews to a sheet of parchment and sprinkle with kosher salt. Cut into bite-sized pieces.
- Toss salad greens with enough poppyseed dressing to coat.
- Divide salad among four salad plates and top with berries, blue cheese and candied cashews.
- Drizzle additional dressing, as desired.
