Chocolate Cherry Ganache Truffles

Let’s make Chocolate Cherry Ganache Truffles! The perfect make-ahead and wrap up elegantly gourmet gift you’ll enjoy giving all season long! These melt-in-your-mouth wonders require minimal ingredients and come together effortlessly.

Ingredients

  • 1/2 cup heavy cream
  • 8 ounces bittersweet chocolate
  • 1 teaspoon almond extract
  • 1/4 cup dried cherries
  • 1/4 cup chopped pistachios
  • Himalayan sea salt for sprinkling, if desired

Instructions

  1. Simmer the cream.
  2. Dump in chocolate.
  3. Remove from heat and let sit for a few minutes.
  4. Snip dried cherries into small pieces with kitchen shears.
  5. Whisk almond extract into ganache until smooth.
  6. Stir in dried cherries.
  7. Transfer ganache to glass bowl, cover and refrigerate until firm.
  8. Use small cookie scoop to scoop out truffles. (You may have to warm the ganache ever so slightly maybe 10-15 seconds in the microwave).
  9. Roll into balls and roll truffles in chopped pistachios.
  10. Drizzle with additional melted bittersweet chocolate and sprinkle with Himalayan sea salt, if desired.
