Chicken Waldorf Salad
I'm all about an all-in-one salad supper, and this classic favorite is a definite crowd-pleasing meal topped with grilled chicken. Meal prep the dressing and toss it with the apples and grapes ahead of time to simplify serving. The dressing is addictive...you may want to double the recipe and have extra on hand to enjoy.
Ingredients
- 6 tablespoons real mayonnaise
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon kosher salt
- 2 teaspoons brown sugar
- 1 cup pecan pieces
- 2 cups red grapes, halved
- 1 honey crisp apple, cored and cut into small pieces
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground pepper
- 2 thin-cut chicken breasts
- 2 cups spring mix lettuce, washed and dried
Instructions
- Preheat oven to 300 degrees and BBQ grill to 350 degrees.
- Spread pecan pieces on rimmed baking sheet and toast in preheated oven for 8 minutes.
- Season both sides of chicken breasts with salt and pepper, and grill on preheated grill, about 6 minutes a side, until cooked through (internal temperature of 165 degrees). Let rest before slicing.
- Whisk together mayonnaise, lemon juice, 1/2 teaspoon Kosher salt and brown sugar.
- Toss grape halves and apple slices in dressing.
- Arrange spring lettuce mix on serving plates. Top with dressed grapes and apples, grilled chicken and toasted pecans. Extra dressing on the side.
