Chewy Cherry Almond Granola Bars

These Chewy Cherry Almond Granola Bars are the BEST way to use up the granola crumbs at the bottom of your favorite bag of granola. Simmer up the simple brown sugar and honey syrup to pour over the granola crumbs, toasted almonds and dried cherries, and all that's left to do is stir, spoon into the granola bar molds and bake. The hardest part for me was waiting for them to cool and set before devouring one. The cherry almond aroma filling the kitchen was so tempting! Hope you love them as much as we do.

Ingredients

  • 2 cups granola crumbs (Purely Elizabeth is the best)
  • 1/2 cup dried cherries
  • 1/2 cup toasted slivered almonds
  • 1 teaspoon kosher salt
  • 3 tablespoons butter
  • 1/4 cup brown sugar (you can cut back on this to 1 or 2 tablesoons if you want, they are admittedly sweet)
  • 2/3 cup honey
  • 1 teaspoon pure almond extract

Instructions

  1. Preheat oven to 300 degrees, and set granola bar mold on baking sheet.
  2. Combine butter, brown sugar and honey in a heavy medium saucepan over medium heat, stirring to combine.
  3. Bring to a boil and simmer briefly, then remove from heat and add almond extract, stirring to combine.
  4. Combine granola crumbs, dried cherries, toasted almonds and salt in a large mixing bowl. Pour syrup over and stir to combine.
  5. Spoon granola bar mixture into granola bar mold to fill. Then press down with parchment.
  6. Bake in preheated oven for 25 minutes. Then remove from oven and let cool completely before unmolding.

*Note: We absolutely LOVED these Chewy Cherry Almond Granola Bars, and they are a bit sweet. Feel free to cut back on the brown sugar if you don't have a sweet tooth, or plan to cut them in half after unmolding them. They're delightfully chewy, and a little sticky, so separate with parchment so they don't stick to the plate you're serving them on.
