Almond Icebox Pie with Glazed Fresh Plums

My new Sweese porcelain fluted pie dish deserved to be filled with something pretty as a picture, and so...say hello to my Almond Icebox Pie with Glazed Fresh Plums, the pop-of-color fresh fall flavored creamy almond pie you'll love having in your fridge, ready to slice, serve and devour.

Ingredients

  • 15 ounce can Eagle Brand sweetened condensed milk
  • 1/3 cup freshly squeezed lemon juice
  • 2 teaspoons pure almond extract
  • 1 cup heavy cream, whipped
  • 5 fresh ripe plums, thinly sliced
  • 1/2 cup plum jelly
  • fresh mint sprigs, for garnish
  • pie shell pressed with slivered almonds before baking

Instructions

  1. Stir together sweeteened condensed milk, lemon juice, and almond extract until thick.
  2. Fold in whipped cream.
  3. Pour into cooled baked pie shell.
  4. Top with fresh plum slices and brush with melted plum jelly.
  5. Chill until set.

Garnish with fresh mint sprigs. Slice and enjoy!
