Sydne George Special of the DayWho doesn’t love the magic of tucking supper ingredients in the slow cooker to simmer while you go about your day, returning hours later to a warm welcome of wonderful aromas of home-cooked comfort food?

And what’s even better is that this week’s Special of the Day column stretches one crock pot creation into two, answering the age-old inquiry of What’s for dinner? for tonight and tomorrow night, too!

Slow cook it once, savor it twice with minor tweaks that transform each all-in-one entrée recipe into something super simple and slightly different for the next day, or in the case of the chowder, a hearty soup that can be frozen and saved for a lazy day dinner on a whim later.

Chipotle Cream Chicken over Buttered Pasta

Chipotle Cream Chicken over Buttered Pasta

Chipotle Cream Chicken over Buttered Pasta

(serves 8 or serves 4 with leftovers for Chipotle Cream Chowder)

2 boneless skinless chicken breasts

1 small sweet onion, sliced into thin rings

½ cup chicken stock

10 ounce can Rotel tomatoes with green chiles

8 ounce cream cheese

1 cup heavy cream

2 tbsp. chipotle peppers in adobo sauce (I actually used ¼ cup, and it had a spicy kick. Back off on the chipotle peppers if you prefer something milder.)

2 tbsp. brown sugar

1 tsp. Kosher salt

1 tsp. oregano

¼ tsp. freshly ground pepper

Red bell pepper, thinly sliced

Fresh basil leaves, for garnish

Combine all ingredients (except red bell pepper and basil leaves) in slow cooker.

Cook on low heat for 3 hours and 45 minutes, or until chicken is easily shredded with a fork.

Turn off slow cooker.

Serve Chipotle Cream Chicken hot over buttered pasta.

*I sautéed a red bell pepper in butter, seasoned with salt and freshly ground pepper and added in top of the Chipotle Cream Chicken for a flavorful garnish.

Top with fresh basil leaves.

Chipotle Cream Chicken Chowder

(serves 4)

(Can be cooled after cooking, transferred to airtight covered freezer container and frozen for rewarming later.)

Heat ½ recipe of Chipotle Cream Chicken (recipe above) in heavy pot over medium heat.

Add:

15.25 ounce can whole kernel corn, drained

4 ounce can green chiles

Heat, stirring occasionally until warmed through.

Thin with chicken stock, if a thinner consistency is desired.

Season with Kosher salt and freshly ground pepper.

Garnish with tortilla chips.

Hoisin-Glazed Pork over Buttered Brown Rice

(serves 8 or serves 4 with leftovers for Hoisin-Glazed Pork Soft Tacos)
24-ounce (1.5 pound) pork tenderloin

1 cup Hoisin sauce (Asian foods aisle)

½ cup rice vinegar

½ tsp. ginger

½ tsp. Kosher salt

2 tbsp. sesame oil (Asian food aisle)

1 cup celery, thinly sliced for garnish

½ cup scallions, thinly sliced for garnish

Combine all ingredients (except celery and scallions) in slow cooker.

Cook on low heat for 4 hours, or until pork is easily shredded with a fork.

Turn off slow cooker.

Serve Hoisin-Glazed Pork hot over cooked buttered brown rice.

*I sautéed thinly sliced celery in butter, seasoned with salt and freshly ground pepper and served atop Hoisin-Glazed Pork for a flavorful garnish.

Top with sliced scallions.

Enjoy!

Hoisin-Glazed Pork Soft Tacos

Hoisin-Glazed Pork Soft Tacos

(serves 4)

½ recipe Hoisin-Glazed Pork

 Make the Asian slaw:

2 tsp. sesame oil

1 tsp. sugar

½ cup real mayonnaise

¼ tsp. Kosher salt

2 cups angel hair cabbage

Whisk sesame oil, sugar, mayonnaise and salt together until smooth.

Stir in cabbage until incorporated.

 For soft tacos:

½ cup Hoisin sauce

4 Soft flour tortillas

1 tbsp. toasted sesame seeds

 Warm tortillas wrapped in damp paper towels in microwave for about 30 seconds.

Spread each tortilla with Hoisin sauce to cover.

Top with warmed Hoisin-Glazed Pork.

Top Hoisin-Glazed Pork with Asian slaw and sprinkle with Toasted Sesame Seeds.
