Running into a friend at a party recently who was raving about a sensational steak recipe she had made sparked my interest, of course, having a husband who enjoys red meat so much he would gladly eat it every single night for dinner, if he could. She kindly walked me through the recipe, and mentioned how much she would love to have a few favorite go-to recipes for sauces to make to complement the steak.

A few favorite go-to sauces to serve atop a sensational steak? But, of course! I could hardly wait to get grilling and create some super simple sauces suitable for the steak, as she suggested.

Turning and rotating the steak every three minutes (or four if you like your steak medium) will achieve the attractive grill marks you see in restaurants and sear the outside without overcooking the inside of your steak. Wrapping each grilled steak individually in foil and letting it rest for eight minutes after cooking will allow all of the juices to redistribute throughout the steak, guaranteeing optimal juiciness in every bite.

Having three super simple go-to sauce recipes in your cache to jazz up your sensational steak takes the guesswork out of dreaming up your next dinner party plan. Prepare the sauce of your choice (or all three!) just before your guests arrive (the Sundried Tomato Basil Compound Butter can be made ahead and frozen or refrigerated) and relax knowing all that’s left to do is grill and wrap your steaks before dinner is on!

One Sensational Steak

(serves 2)

Two 1 ½ inch thick tenderloin steaks (about 8 ounces, each)

Kosher salt

Freshly ground pepper

Preheat barbecue grill to medium heat (about 400 degrees).

Season both sides of steaks generously with Kosher salt and freshly ground pepper.

Grill steaks over medium heat, flipping and rotating with tongs, every three minutes, for a total of 12 minutes (for medium rare). (If you prefer your steaks cooked to medium, increase cooking time to four minutes before flipping and rotating, for a total of 16 minutes.) Remove steaks, wrap individually in foil and let sit for eight minutes. Serve hot with a super simple sauce of your choice.

Blender Béarnaise and Crab

Recipe by Sydne George

(makes sauce for 2 steaks)

½ white wine

¼ cup tarragon vinegar

1 tbsp. fresh tarragon, leaves only, minced

1 tbsp. shallots, minced

3 egg yolks

¼ tsp. Kosher salt

¾ cup butter

In a medium saucepan over medium high heat, combine white wine, vinegar, tarragon and shallots. Bring to a simmer and cook until most of the liquid has evaporated. Remove from heat.

In blender, combine shallot mixture, egg yolks and salt. Blend.

Melt butter in a saucepan over the stove. Stream hot butter into the blended mixture through the top opening of the blender to reduce splattering. Blend until thickened.

Serve hot over grilled steak with crabmeat. Garnish with fresh tarragon sprigs.

Sundried Tomato and Basil Compound Butter

Recipe by Sydne George

(makes enough for four steaks)

¼ cup real butter, softened

1 tbsp. julienne cut sundried tomatoes, in oil, drained

1 clove garlic, minced

1 tbsp. (packed) fresh basil leaves, minced

1 tbsp. freshly grated parmesan cheese

1/8 tsp. Kosher salt

Using electric mixer, mix all ingredients together until thoroughly combined.

Transfer to a sheet of waxed paper and form into a log.

Wrap up in waxed paper and freeze until solid.

Remove from freezer, slice into thick slices and serve on top of grilled steak. Sundried Tomato and Basil Compound Butter will warm and soften on top of the steak.

Garnish with fresh basil leaves.

Spinach Florentine Sauce

Recipe by Sydne George

(makes sauce for two steaks)

2 tbsp. olive oil

1 clove garlic, minced

2 cups (packed) baby spinach

¼ cup heavy cream

Kosher salt, to taste

Heat olive oil in medium sauté pan over medium heat. Add garlic and cook until softened.

Add spinach and cook, just until wilted. Add cream and cook until thickened. Season with Kosher salt to taste.

Serve hot over grilled steak.
