Having grown up on a wheat ranch with a mom who ground the wheat my dad grew into flour for the bread she baked almost daily in the summer, it seems almost sacrilegious to buy frozen bread dough in the store.

But there it was…that three-pound bag of Rhodes Dinner Roll dough balls resting quietly in the freezer department of Albertsons, calling my name. Before I knew it, I was dreaming of all the delicious creations I could make using ready-made roll dough. Sticky buns for breakfast, stuffed breadsticks for lunch and personal pizzas for dinner, too!

What a find! These frozen balls of dough thaw quickly in the microwave and are then ready to form and bake into whatever your heart desires. One 3-pound bag of Rhodes Dinner Rolls contains 36 rolls, enough to make all three of the recipes in this week’s Special of the Day.

Sticky Streusel Buns

Sticky Streusel Buns

(makes  6)

Make the streusel topping:

¼ cup butter, softened

¼ cup brown sugar

1 tsp. cinnamon

¼ cup pecans, chopped

2 tsp. flour

Combine streusel topping ingredients in medium mixing bowl. Use pastry blender to cut butter into mixture. Set aside.

12 Rhodes Dinner Rolls, thawed

¼ cup  butter, melted

Preheat oven to 350 degrees. Brush melted butter in bottom and sides of 6 cups of a mid-sized muffin tin. Place one thawed dinner roll in each prepared cup. Use a table knife to cut a deep slit in each ball of dough. Sprinkle streusel topping to fill and cover the buns. Place in preheated oven and bake for 20-22 minutes, just until light golden brown and baked through. Enjoy!

Reuben-stuffed Breadstick

Reuben Stuffed Breadsticks

(makes 6)

12 Rhodes Dinner Rolls, thawed

¼ pound deli corned beef, shaved

¼ cup sauerkraut, drained

¼ pound swiss cheese, thinly sliced

3 tbsp. Thousand Island dressing plus additional for dipping

Caraway seeds

Preheat oven to 350 degrees. Grease a baking sheet. Combine dough from two dinner rolls into one ball and roll into a long breadstick. Repeat for other 5 bread sticks. Transfer breadsticks to greased baking pan. Use a table knife to cut a slit in each breadstick. Spread Thousand Island dressing in slit of each breadstick. Top with corned beef, sauerkraut, swiss cheese and caraway seed. Bake in preheated oven for 10-12 minutes or until breadsticks are baked through.  Serve hot with additional Thousand Island dressing for dipping, if desired. Enjoy!

(makes 6)

2 tbsp. butter

1 clove garlic

½ cup mushrooms, sliced

12 Rhodes Dinner Rolls, thawed

½ cup pizza sauce

¼ pound pepperoni

½ cup mozzarella, grated

2 tsp. crushed red pepper

Olive oil, for brushing crust

Preheat oven to 375 degrees. Grease a baking sheet.

Melt butter in medium sauté pan over medium heat. Sauté garlic and mushrooms briefly, just until slightly softened. Set aside.

Combine dough from two dinner rolls into one ball and roll into thin round for pizza crust. Repeat for remaining rolls, making 6 pizza crusts.  Transfer to prepared baking sheet.

Spread a thin layer of sauce over each crust. Arrange sautéed mushrooms and pepperoni over sauce. Top with mozzarella. Use pastry brush to brush edges of crust with olive oil. Bake in preheated oven 10-15 minutes or until crust is light golden brown and cooked through. Sprinkle baked pizzas with crushed red pepper, if desired. Enjoy!
