Honey Ham and Spinach Florentine Muffins

George-Sydne-food-300x204Wouldn’t it be nice to have one melt-in-your mouth muffin recipe in your repertoire you could easily customize to satisfy all of your baked good cravings, sweet and savory alike? It sure would…and now you do!

This week’s Special of the Day brings you a quick-to-mix-up versatile muffin batter with three terrific topping ideas to get you started and an endless supply of other possibilities just waiting to be created by you.

Make once and eat again and again: Raspberry Cream Cheese Streusel Muffins with coffee in the morning, Honey Ham and Spinach Florentine for an all-in-one grab-and-go option, Cheesy Chile Corn Muffins with soup or salad for lunch, or any of the three as an accompaniment to what you’re serving for dinner.

Individually packaged in a sealed plastic bag after baking and cooling, these marvelous muffins can be unwrapped and popped in the microwave to rewarm briefly and are just as good for breakfast, lunch or dinner the next day.

Mix up a batch of Master Muffin Mix and make a few of each kind or invent your own with this week’s Special of the Day: Muffin Mania and recipes for Raspberry Cream Cheese Streusel Muffins, Honey Ham and Spinach Florentine Muffins and Cheesy Chile Corn Muffins. Enjoy!

Master Muffin Mix

(makes 12 muffins)

Recipe by Sydne George

1 cup butter, room temperature

2/3 cup sugar

3 eggs

3 cups flour

3 tsp. baking powder

¼ tsp. salt

1 cup sour cream

Preheat oven to 350 degrees and set rack in middle of oven. Using electric mixer, cream butter and sugar. Add eggs, one at a time, beating to incorporate before adding another. Beat in remaining ingredients. Do not overmix. Line muffin pan with papers. Fill liners with muffin batter, filling about 2/3 full.  Add desired toppings (recipes follow) and bake for 15-17 minutes, until toothpick inserted in center comes out clean. Enjoy!

Raspberry Cream Cheese Streusel Muffins

 

Raspberry Streusel Cream Cheese 

(topping for 12 muffins)

8 ounces cream cheese, softened

3 tbsp. brown sugar

½ tsp. cinnamon

¼ cup fresh raspberries

Using electric mixer, mix cream cheese, brown sugar and cinnamon. Place a spoonful of topping on each muffin. Top with fresh raspberries. Bake for 15-17 minutes, until toothpick inserted in center comes out clean. Enjoy!

Honey Ham and Spinach Florentine Muffins

Honey Ham and Spinach Florentine

(topping for 12 muffins)

Recipe by Sydne George

2 tbsp. olive oil

1 cup baby spinach leaves, fresh

½ tsp. garlic powder

¼ tsp. Kosher salt

1/8 tsp. freshly ground pepper

2 tbsp. cream

2 tbsp. parmesan shreds

Heat a medium sauté pan over medium high heat. Add olive oil. When hot, add spinach and sauté briefly, just until wilted and bright green. Add remaining ingredients and stir until combined.

¼ pound honey ham (deli) shaved and sliced into bite-sized pieces

Tuck honey ham around edges of muffin batter and top with Spinach Florentine.

Bake for 15-17 minutes, until toothpick inserted in center comes out clean. Enjoy!

Cheesy Chile Corn Muffins

Cheesy Chile Corn Muffins

(makes 12 muffins)

Recipe by Sydne George

¼ cup sour cream

½ tsp. chili powder

1/8 tsp. Kosher salt

2 tsp. green chiles, drained

3 tbsp. corn

¼ cup cheddar cheese, grated

Mix sour cream, chili powder and salt in medium mixing bowl.

Top each muffin with a spoonful of spicy sour cream. Sprinkle green chiles, corn and cheddar cheese on top. Bake for 15-17 minutes, until toothpick inserted in center comes out clean. Enjoy!
