Everyone’s busy these days, and sometimes the last thing we carve out time for is cooking a home-cooked meal. I have heard from more than a few readers that what they are looking for in a recipe is something quick and easy to fall back on, something that requires minimal ingredients and prep time.

I hear you. This week’s Special of the Day goes out to you with three all-in-one economical and easy family friendly recipes that can be customized as desired to serve up for breakfast, lunch or dinner.

With step-by-step easy to follow instructions, these three recipes are designed to work for any beginner cook. Ramp up the nutritional value of each recipe by including a few of your favorite steamed or sautéed vegetables or add a serving of fresh fruit on the side.

Fix-it-Fast Breakfast Burrito

            Recipe by Sydne George

            (makes one burrito)

            1 egg

1 tbsp. milk

1 tbsp. butter

Dash of freshly ground pepper

Dash of Kosher salt

¼ cup grated cheddar cheese

1 flour tortilla

  1. Melt butter in pan over medium heat on stove.
  2. Combine egg, milk, salt and pepper in a small bowl. Use a fork to mix thoroughly.
  3. Let egg cook until it starts to set, then stir to scramble.
  4. When egg is cooked (no longer runny), sprinkle with cheese. Turn off heat on stove.
  5. Transfer scrambled egg to tortilla. Roll up. Cut in half.

Bacon and Cheese Baked Potato

Fix-it-Fast Bacon and Cheese Baked Potato

            Recipe by Sydne George

            (makes one baked potato)

            1 russet potato, washed and dried

2 slices bacon

¼ cup grated cheddar cheese

1 tbsp. butter

  1. Pierce washed potato several times with a fork.
  2. Cook potato in microwave for five minutes.
  3. Turn potato over and cook for an additional five minutes. Remove potato from microwave.
  4. Place bacon strips between two paper towels in microwave and cook for three minutes. Cool. Crumble bacon.
  5. Cut slit down middle of baked potato. Top with butter, cheese and bacon.

Easy English Muffin Pizza

Easy English Muffin Pizza

Fix-it-Fast Easy English Muffin Pizza

            Recipe by Sydne George

            (makes one English muffin pizza)

            1 English muffin, split

1 tbsp. butter

Garlic powder, if desired

2 tbsp. pizza sauce

8 slices pepperoni

¼ cup grated mozzarella cheese

  1. Melt butter in microwave for 20 seconds. Add a dash of garlic powder, if desired.
  2. Brush insides of English muffin with garlic butter.
  3. Spoon pizza sauce over buttered English muffins.
  4. Top with pepperoni and cheese and place on baking sheet.
  5. Bake in 375 degree oven for 6-8 minutes.
