Roasted Pepper and Brie Breakfast Panini

Those fluffy flakes of snow slowly fluttering down signal the onset of winter, with colder temperatures that make getting up challenging for those of us who savor slumbering in our warm cozy beds.

It does help when you know there’s something hot and hearty on the menu for breakfast, though. Why not give Panini a whirl for the morning meal? Tuck your favorite toppings between slices of Texas toast to lightly grill and presto, breakfast is on!

Anything goes when it comes to Panini, and it’s easy to customize the breakfast sandwiches to please everyone because they come together so quickly. Another advantage is that the Panini sandwiches are self-contained and easy to transport in case you’re short on time or need a mobile breakfast on the go. You could even make them ahead, wrap tightly in foil and keep them warm in the oven until you load up and head out on the road.

Sauteed Apple Panini with Maple Cream Cheese

Sautéed Apple Panini with Maple Cream Cheese

(makes one Panini sandwich)

1 tbsp. butter

½ apple, sliced into thin slices

Dash cinnamon

1 tbsp. maple syrup

2 ounces cream cheese

1/8 tsp. salt

2 slices Texas toast bread

1 tbsp. melted butter

Preheat Panini grill.

Heat medium sauté pan over medium high heat. Add butter and allow to melt. Add apple slices and sauté briefly, just until slightly softened. Sprinkle with cinnamon. Remove from heat.

Beat cream cheese, maple syrup and salt until well-mixed. Set aside.

Place Texas toast on work surface. Top each slice with maple cream cheese spreading out to edges. Arrange sautéed apples on top of one slice of Texas toast and top with other, maple cream cheese side down. Brush outside of Texas toast with melted butter, flip and butter other side. Grill in preheated Panini grill just until golden brown. Enjoy!

Roasted Pepper and Brie Breakfast Panini

Roasted Pepper and Brie Breakfast Panini

(makes one Panini sandwich)

*Thinly sliced prosciutto would be a nice addition to this sandwich, if desired

½ red bell pepper, seeded cored and cut into bite sized pieces

½ yellow bell pepper, seeded cored and cut into bite sized pieces

½ orange bell pepper, seeded cored and cut into bite sized pieces

2 cloves garlic, minced

2 tbsp. olive oil

2 slices Texas toast bread

1 tbsp. melted butter

2 ounces brie, sliced

Fresh basil leaves, for garnish

Preheat oven to 375 degrees and set oven rack in the middle of the oven.

Arrange pepper pieces on rimmed baking sheet and distribute garlic over evenly. Drizzle with olive oil.

Roast in preheated oven for 30 minutes. Remove from oven and let rest.

Preheat Panini grill.

Brush outside of each slice of Texas toast with melted butter. Place on work surface. Top Texas toast with roasted pepper slices and top with brie to cover. Top with other slice of Texas toast, buttered side out. Grill on Panini press just until brie melts and Texas toast is golden brown. Garnish with fresh basil, if desired. Enjoy!
