19 Jan Special of the Day~ Bouchon Bistro’s Bacon and Chive Waffles
A huge fan of Thomas Keller~ celebrity chef, cookbook author, restaurateur and all-around culinary rock star whose French Laundry restaurant in the Napa Valley was called “the most exciting place to eat in the United States” by Ruth Reichl in the New York Times, I was elated to see his bevy of Bouchon outposts sprinkled throughout the Venetian Hotel on our recent weekend getaway to Las Vegas.
Keller’s exceptionally high standards and attention to detail shine through in every venture he undertakes, and this was certainly evident as we enjoyed the fruits of his labors first at Bouchon Bakery and eventually at Bouchon Bistro.
To be honest, finding Bouchon Bakery was a bit of a scavenger hunt, and we actually stumbled upon two smaller Bouchon Bakery stations before locating the charming flagship bakery with patio seating on the Las Vegas Boulevard.
While the other two Bouchon bakery stands in the Venetian are designed for grab-and-go service, the Bouchon Bakery on the Las Vegas Boulevard side near the Sports Book has a patio that provides the perfect place to linger over a latte and a pastry while participating in some world class people watching.
The return route to our room each afternoon après exploration whisked us past the entrance to the elegantly appointed Bouchon Bistro, so when the opportunity arose to have brunch there with the family on Sunday, we jumped at the chance.
And honestly, what could be better than chicken and waffles for the day-after-half-marathon breakfast feast for our daughter Mackenzie? Or for anyone, I guess I would say after having a bite of that amazing waffle, cooked to a crisp golden brown perfection on the outside while maintaining a palate-pleasing tenderness on the inside and served with Tahitian vanilla bean butter and sauce Chasseur, it is not to be missed if you find yourself fortunate enough to be having brunch at Bouchon Bistro.

Bouchon’s Bacon and Chive Waffles

Note: You will need a food scale for this recipe.
All ingredients are listed in grams to ensure intended results with the waffle recipe.
(makes 4-6 waffles)
|Butter/Sweet (melted and cooled)||128.67|
|In addition, you will need 14 grams of crispy bacon, crumbled and 14 grams of sliced chives for each waffle.|
Preheat a waffle maker to a medium setting and preheat the oven to 275 degrees. Place a large wire rack onto a baking sheet and keep it warm in the oven.
Whisk the flour, baking powder, salt, sugar and baking soda together in a large mixing bowl. Whisk the water, milk, eggs and butter together until mixed, then whisk them into the dry ingredients until combined.
Ladle batter into waffle maker, top with 14 grams of crispy bacon and 14 grams of finely chopped chives, and close the lid and cook for about five minutes, or until golden-brown and crispy. Repeat the process until the batter is used up.
